Thai Peanut Chicken

1 1/2 lbs boneless skinless chicken thigh
3/4 C coconut milk
1/2 C orange juice
1/2  C peanut butter
1/8 C orange marmalade
1 T soy sauce
1 T teriyaki sauce
1 T hoisin sauce
1 T toasted sesame seed oil
1 C uncooked rice
½ C crushed peanuts

1.       Combine chicken, milk, juice, peanut butter, marmalade, soy sauce, hoisin and sesame seed oil in the crock pot and cook on low for 4-5 hours.
2.       Cook the rice according to instructions
3.       Remove chicken from crock pot, shred and add back to sauce
4.       Serve over rice and top with crushed peanuts

To Freeze:
1.       Combine chicken, milk, juice, peanut butter, marmalade, soy sauce, hoisin and sesame seed oil in a freezer bag and freeze
2. To cook, defrost and place in crock pot and cook on low for 4-5 hours
3.       Cook the rice according to instructions
4.       Remove chicken from crock pot, shred and add back to sauce
5.       Serve over rice and top with crushed peanuts

Cheesy Chicken and Rice

2 chicken breasts
1 onion minced
1 can cream of mushroom or cream of chicken soup
3 C cooked rice of your choice
1 C shredded cheddar cheese
2 C corn
½ tsp poultry seasoning
½ tbsp onion powder
½ tbsp garlic powder

1.       Place chicken, onion and cream soup in the crock pot
2.       Cook on Low for 7-8 hours or High for 3-4 hours
3.       30 min. before it is done, remove chicken breast and shred
4.       Add chicken back in then, add rice, cheese, corn and seasoning for the last 30 min.
5.       Stir well to combine

To freeze:
1. Place chicken, onion and cream soup in a freezer safe bag and freeze
2. Place rice, cheese, corn and seasonings in a freezer bag and freeze
3. Let defrost completely 
4.  Place chicken, onion and cream soup in the crock pot
5. Cook on Low for 7-8 hours or High for 3-4 hours
6. 30 min. before it is done, remove chicken breast and shred
7. Add chicken back in then, add rice, cheese, corn and seasoning  for the last 30 min.
8. Stir well to combine

Beef and Broccoli

1 lb carne asada, sliced into thin strips
1 C beef broth
1/2 C soy sauce
1/3 C brown sugar
1 tbsp sesame oil
4 cloves garlic, minced
1 tsp onion powder
2 tbsp cornstarch
2 tbsp cooled sauce from the crock pot after being cooked
2 C frozen broccoli


1. Place beef in a crock pot
2. In a small bowl, combine broth, soy sauce, brown sugar, sesame oil, onion powder and garlic. Pour over beef. Cook on low for 6-8 hours
3. In a cup, stir cornstarch and sauce form the crock pot until smooth. Add to crock pot. Stir well to combine
4. Stir broccoli into the beef and sauce mix
5. Cover and cook an additional 30 minutes on high
6. Serve over rice

To Freeze:
1. Place beef, broth, soy sauce, brown sugar, sesame oil, onion powder and garlic in a freezer safe ziploc bag
2. When ready to cook, place the ziploc bag ingredients in the crock pot and cook on low for 6-8 hours
3. Then follow steps 3-6

Baked Potato Soup

64 oz vegetable broth
5 lbs baby red potatoes, not peeled and quartered
1 onion, diced
2 tbsp seasoning salt
1 tsp pepper
5 cloves garlic, minced
16 oz cream cheese










1. Place potatoes, broth, onions, seasoning salt, pepper and garlic in the crock pot.
2. Cook on high for 6 hours or low for 10
3. Add cream cheese
4. Use an immersion blender to smooth to the desired consistency

To Freeze:
1. Follow steps 1-4 and place in a freezer safe container
2. When ready to serve, defrost and warm on the stove top

Pulled Pork Sandwiches

1 lb pork shoulder
1 bottle of BBQ sauce
1 onion, finely diced
½ C brown sugar
1 tsp ground mustard
1 tsp paprika
1 tsp ground pepper
1/2 tbsp garlic powder
1 tsp onion powder
2 tbsp Worcestshire sauce

8 hamburger buns


1. Cook on low for 8 hours or high for 4 hours in a slow cooker
2. Remove pork, shred and return to slow cooker for 15-30 minutes
3. Pile about a 1/2 C on each hamburger bun and enjoy!

To Freeze:
1. Place all ingredients in a freezer safe bag
2. When ready to make, dump all ingredients into the slow cooker 
3. Cook on low for 8 hours or high for 4 hours in a slow cooker
4. Remove pork, shred and return to slow cooker for 15-30 minutes
5. Pile about a 1/2 C on each hamburger bun and enjoy!

Beef Stew

1 1/4 lb. beef stew meat, cubed
1/2 tsp pepper
2 C chopped carrots
1 medium onion, diced
6 stalks celery, chopped
4 potatoes, cubed
12 oz. sliced mushrooms
1 can cream of mushroom soup
2 tbsp onion powder
1 tbsp paprika
2 cloves garlic, minced
1 tbsp garlic powder
2 beef bouillon cubes


Place all ingredients in crock pot and cover the ingredients with water. Cook on low for 12-16 hours, the longer the better.

Chicken Tortilla Soup

3 chicken breasts
10 oz. Enchilada Sauce
15 oz. can diced tomatoes, including juice
15 oz. can black beans, drained
1 medium onion, chopped
4 oz. can green chilies, diced
3 cloves garlic, minced
2 C water
29 oz. chicken broth
1 1/2 tsp cumin
1 tsp chili powder
1/2 tsp salt
16 oz. frozen corn
1 tbsp chopped cilantro
3 tortillas (optional)
1 tsp chili powder (optional)
1 tsp salt (optional)
8 tbsp light sour cream (optional)
8 tbsp shredded cheddar cheese (optional)

In a large saucepan, boil chicken breasts for 30 minutes. Shred chicken with a fork and add to crock pot. Add the next 12 ingredients and mix together. Let sit in the fridge overnight. Cook on low for 4-6 hours or high for 3-4 hours.

Optional Additions:
Preheat oven to 400. Slice tortillas into strips and place them as a single layer onto a cookie sheet. Spray tortilla strips with non-stick cooking spray. Mix 1 tsp chili powder and 1 tsp salt together and sprinkle on strips. Cook for 15 minutes or until crisp. When serving, place a tbsp light sour cream, a tbsp of cheddar cheese and a handful of tortilla strips on top of soup.

Crock Pot Mac and Cheese

16 oz elbow pasta
1 1/2 C low fat or non fat milk
1 egg, scrambled
1/2 fat free sour cream
2 cloves garlic, minced
1 tsp ground mustard
2 tsp ground black pepper
1/2 tsp red pepper flakes
3 C shredded colby jack cheese


Spray crock pot with non-stick cooking spray. Place uncooked elbow pasta in crock pot. In a medium mixing bowl, mix milk, and egg together. Mix in sour cream and seasoning. Add cheese and pour over pasta. Mix cheese mixture into pasta. Cook on Low for 4-6 hours or High for 2-3 hours.
