Chicken Cordon Bleu

4 chicken breasts
1 egg
3/4 C seasoned breadcrumbs
1/8 tsp thyme
1/8 tsp sage
8 slices of black forest ham
4 slices of swiss cheese
toothpicks

Preheat oven to 400. Spray baking sheet with non-stick cooking spray. Beat egg in a medium bowl. Mix breadcrumbs, thyme and sage in a separate bowl. Slice the chicken breasts 3/4 of the way through to make a pocket. Wrap 1 slice of cheese in two slices of ham. Stuff inside the pocket of each chicken breast. Close with toothpicks. Dunk the stuffed chicken breasts in egg then roll in bread crumbs. Place on baking sheet. Cook for 25 minutes.

    I love Chicken Cordon Bleu, but I've only made it once because the recipe I had was, well, a major pain in the a*s. But the recipe you've posted sounds a lot easier. May have to give it a try in April when my girlfriend comes to visit. Thanks!
